In this series we will share with you our top picks of tasty recipes inspired by home cooking & world travelling. To get us started we have the perfect wholesome dish for this autumn season…
Momma Kenny’s Irish Stew
Ingredients:
1 onion
2 lbs stewing beef
3-4 carrots
1-2 parsnips
1/4 cauiflower
1/4 broccoli
4 potatoes (or baby turnips for a little twist!)
oxtail soup (or organic grass fed bone broth for an extra health kick!)
thyme
salt
pepper
Method:
Wash, peel & chop all vegetables.
In a large pot, fry onion with thyme and salt and pepper.
Add beef and cook on low heat for 20 minutes.
Add hot water and slow cook for 1 hour.
Add vegetables, more hot water & cover pot. If using baby turnips, add these now too. Cook for 30 minutes.
While the vegetables are cooking, boil potatoes in a separate pot.
Add oxtail soup (or bone broth) and cook for a further 10-15 minutes.
Add potatoes to large pot, taste & add more salt/pepper/thyme if needed.
