1 ripe mashed banana
2 beaten eggs
2 tbsp ground flaxseed
1/4 tsp vanilla extract (optional)
coconut oil (or other cooking oil)

Mix banana, eggs & flaxseed together in a bowl until smooth.

Add vanilla extract.

Heat oil in a pan. Transfer 1/4 of mixture at a time into pan. Cook each side for roughly 30 seconds. Flip pancakes until each side is lightly browned.

Serve with your favourite pancake topping!
